Bayerischer Wurstsalat (Bavarian-Style Sausage Salad)

More salad time …. and I have to say that I am prepared for the jokes …. this is Wurstsalat. Not the worst salad (it’s actually really good!), but Bayerischer Wurstsalat, Bavarian-Style Sausage Salad. Sure, might seem a little strange to make a salad out of sausage, but it’s yummy, refreshing and easy to make, something perfect for a Brotzeit (translation: savory snack or light meal), something that you would eat at a biergarten. There are actually many styles, predominantly from Bavaria and Switzerland, but also Austria, Swabia and even parts of France. Some include cheese as well, some have mayo. Load it only a piece of hearty bread or with a pretzel. In my part of the US, the sausage types are more limited (though that might not be the case with larger German-heritage populations) but I made do with German bologna. So bring on the worst jokes, I’ll keep eating!

Kasespätzle (Swabian / Bavarian Cheesy Noodles)

This is perhaps the epitome of comfort food for me : Kasespätzle! I guess you could consider it Southern German “Mac & Cheese”, except with homemade pasta, Swiss cheese instead of cheddar and onions. It’s the first and last thing that I eat when I go home to Germany, and while I don’t make it all that often at home (mainly because the carbs and cheese add up to lots of calories!), it is the thing that I crave when I need a foodie “hug”. It’s delicious, it’s comforting and it instantly puts a smile on my face.

Honey Porter Miche
(Honig und Dunkel Bier Mischbrot)

This week in Sourdough experiments, I went with a Honey Porter Miche, aka Honig Dunkel Bier Mischbrot, aka a Honey Porter Rye and Whole Wheat Loaf. It’s a little darker, thicker and heavier than some of my other breads, but intentionally so. And it has a great flavor. The porter is a little bitter, the honey sweet and the combination is just right for a hearty slice with raclette cheese or with a warm soup as autumn rolls in. This will have to stay on the rotation, I think.

Traditional German-Style Cheesecake (Käsekuchen)

Something very German today: Käsekuchen, traditional German-style Cheesecake. It is made with Quark, which is nearly impossible to find around here, but I make my own (sort of like making yogurt). I am always a little nervous when making cheesecake, actually, because it can get quite dense or develop an unslightly crack through the middle, but this was light an fluffy and very was a great success. It was tart and lemony and yet still sweet and light. Pleased with the result.

Sourdough Hazelnut Swirls
(Filbert and Alice’s Nußschnecken)

Starting off October right with this autumn-inspired breakfast treat: Sourdough Hazelnut Swirls aka Filbert and Alice’s Nußschnecken. Sourdough (although you could also make this with a yeast brioche dough) and a caramelly-nutty (hazelnuts, but you could also use walnuts) filling. Not too sweet, a little bit of honey inspired. Delicious straight out of the oven. These are definitely on repeat!
